Scottish Shortbread

Shortbread~
Ingredients
250g (8oz) butter
1/3 cup caster sugar
¼ cup ground rice or rice flour
2 ¼ cups plain flour
Method
©Cream
butter and sugar until light and creamy
©Stir
in sifted flours in two batches
©Turn
on to lightly floured surface, knead lightly until smooth
©Scottish
Shortbread can be cooked in many ways, here is a suggested method:
Mixture can
be pressed into wooden shortbread moulds
which have
been well rubbed with fingers dusted with corn flour
©Shake
out excess corn flour & cut away excess dough with sharp knife
©Tap
mould sharply on greased oven tray, shortbread shape will fall out
easily on to tray
©Mould
must be well rubbed with corn flour for each shortbread shape
©Bake
in slow oven about 30 minutes
©Stand
few minutes before lifting on to wire rack to cool
