Orange Date Cake

Ingredients
Cake
125g butter
2 teaspoons grated orange
rind
¾ cups caster sugar
2 eggs
1 cup self-raising flour
½ cup plain flour
1/3 cup orange juice
1 cup chopped dates
Orange frosting
60 g butter
1 teaspoon grated orange
rind
1 ½ cup icing sugar
2 tablespoons orange juice,
approximately
Method
©Grease
a 20 cm ring pan, line base with paper, grease paper
©Combine
butter, rind, sugar, eggs, sifted flours and orange juice in small bowl
of electric
mixer, beat on lowest speed until ingredients are combined
©Increase
speed to medium, beat 2 minutes or until mixture
changes in
color & is smooth
©Stir
in dates, then spread mixture into prepared pan
©Bake
in moderate oven for about 40 mins on 180˚C
©Stand 2 minutes, before turning on to
wire rack to cool
©Top
cold cake with frosting, decorate with shredded orange rind if desired
For the orange frosting
©Beat
butter and rind in small bowl with electric mixer until creamy
©Add
iced sugar and orange juice
©Beat
until frosting is spread-able
