~A
tradional chicken dish~
Makes
a whole feast
Ingredients
2
fresh chickens
2
cups rice
6
pieces fresh tomato, chopped
2
small tins of tomato paste
4
onions, chopped
2
pieces of capsicums, chopped
2
pieces eggplant, chopped
2
tablespoons of fresh crushed garlic & ginger
a
little dried lemon
a
little hot chili powder
1
tablespoon mixed spices (bizaar)
1
tablespoon medras curry powder
1
teaspoon cardamom powder
1
teaspoon cinnamon powder
Salt
to taste
a
little oil
a
little fresh chopped coriander leaves
Around
2 liters of water
Method
©Clean
the chicken and cut into 4 pieces.
©In
a cooking pan, fry onion, capsicum and eggplant until slightly
brown.
Add
garlic & ginger and cook until brown.
Follow
by tomato paste, all the spices and dried lemon. Fry for about 1
more min.
Add
the fresh tomato and cook until soft.
Finally
add the chicken and close the pan.
Leave
to cook for about 10 mins.
©Add
water to cook the chicken and close the pan.
Leave
it to cook on medium fire till chicken is soft and cooked.
©Take
out the chicken from the cooking pan
and
remove the bones. Then return the boneless chicken into the
cooking pan.
©Add
the fresh coriander leaves and the washed rice into the pan.
Make
sure there is enough water to cook the rice.
©Close
the pan and cook under slow fire till
the
rice is soft and cooked. (Around 30 mins)
©Remove
the pan from the fire and place on the ground.
©With
a big wooden spoon, beat the cooked ingredients in the pan
until
soft
and well-combined together (this is the part where you work-out
your muscles)
©Serve
on a separate plate and top with ghee (dehn).

with healthy vitamins & makes one wholesome meal!
