Lemon Cake
(Step-by-Step)

What you need:
For the cake:
250 grams sugar
227 grams butter
6 eggs
1 teaspoon vanilla essence
250 grams flour
1 tablespoon baking powder
1 small tin of milk (e.g. Rainbow)
1 teaspoon lemon rind
For the icing:
3 cups icing sugar
5 tablespoons water
2 tablespoons lemon juice
1 teaspoon lemon rind
1 tablespoon butter
Method

Make sure all your ingredients
are out and ready!
First we'll start with the cake..

Put the butter and sugar in a
bowl..

Mix together until well
combined..

Next start adding the eggs,
putting one egg
at a time when mixing..

Blend until all 6 eggs are well
combined with the mix..

Next vanilla essence.. the base
of your cake's flavor
comes from this tiny bottle..
add just a teaspoon to the mix..

On the side, for those who are
wondering what lemon rind is,
or where to get it from.. It's no
rocket scientist job.. just get
a lemon & a metal grater..

Grate just a little bit off
your lemon's skin to get the
legendary 'lemon rind' (yes
that's how it looks like)
You only need about 2
teaspoonfuls of it..

Enough with the commercial break..
back to our batter..
Start mixing in little portions
of the flour until all 250grams of it
is well combined in the mix..
Add the 1 tablespoon of baking
powder while you're at it..

Add the tinned milk & continue
mixing..

Finally, the last, yet most
important part of the recipe,
add the 1 teaspoon of lemon
rind & mix..

Add the mix into the baking
pan.. & put in the oven on 180degrees
for around an hour (or until
it's well baked- ok the ladies will know
when this happens)..

When it's ready, get out of the
oven & set aside to cool down..

Next, we start to make the
icing.. it's important
to only begin 'AFTER' the
cake is out..
Because the icing hardens quickly
if left aside..

Put the 3 cups of icing sugar in
a bowl, add the 5 tablespoons of water
to them & start mixing..

Add the 1 tablespoon of butter,
2 tablespoons of lemon juice,
& yes.. that 1 teaspoon of
lemon rind..

Mix altogether until its all
well combined & creamy..

After your icing is ready &
creamy..
immediately start
topping your cake with it..

Cover the cake completely with
the icing & set aside for
a while before attacking (or
sharing with friends!) ;)
