~delicious Lamb baryani dish~
To make this possible, you need:
2Kg Lamb
6 Cups rice
4 Tomatoes
3 Onions
3 Potatoes
1/2 Capsicum
Tomato Paste
Yogurt
Mixed Spices (black& red pepper, "korkom", bzaar m5ala6, kezbara)
Saffron
Method
Cut the meat into small pieces & wash thoroughly
Boil the meat for 45 minutes. Add some salt, pepper and lemon.
Make sure to take out the bubbles clustering on top.
While the meat is boiling, chop up the vegetables into small pieces
Wash the 6 cups of rice and keep aside
Meat should of cooked and ready by now..
Fry the onions till they become golden brown
Add the meat and mix with the onions
Add 3 small spoons of bzaar ma5alla6 (mixed spices), 2 small spoons kurkum,
1 small spoon felfel a7mar and 1 small spoon kerzbara
Add some yogurt and mix it up
Add the chopped potatoes
Then add the chopped tomatoes
Add the rest of the vegetables and mix it up
Cover and cook on medium heat for approximately 5 minutes
Add in the tomato paste, mix then cover it again and leave
to cook for 10 minutes
Meanwhile, boil the rice until its half done, don’t worry we’ll continue cooking
it later..
Then pour it in a water drainer like shown in the photo above
Get a large pan, put half the rice in it..

Then pour in the meat on top of the rice..
Put the other half of the rice over the meat..
So we have 3 levels in the kettle now: 1.rice 2.meat 3.rice..
Sprinkle some saffron on the top to have a nice smell
& make your guests more hungry *ummmm* =P
Cover the pot with aluminum foil, cook it on low heat for 15 – 20 minutes..
When cooked.. serve on plates.. add fried onions and boiled eggs for garnish (optional)
*hana ow 3aafyeh 3ala glooblkom*
Enjoy the feast! =D
